Boiled Peanuts

Serves 8-10

Ingredients

1 lb raw peanuts (washed)

6 pieces star anise

3 cloves garlic, crushed

1 cinnamon stick

1/2 tsp cloves

4 in. piece ginger, crushed

3 pods black cardamom (optional )

1/4 cup kosher salt

Directions

Add all of the ingredients to a large pot and fill with water – approximately 10 cups. Make sure there is enough water to submerge the peanuts by 3 inches. Weigh down the peanuts with a saucepan lid that is smaller than your pot in order to keep the peanuts submerged while cooking.

Bring to a boil, then lower heat to medium-low and simmer for approximately 3-4 hours or until desired tenderness.

Strain off the liquid and enjoy warm or at room temperature.
