Maura’s Famous Marlin Dip

Saui Matagiese is one of our Sustainable Seafood Ambassadors. He is also a Fish Sommelier at Mina’s Fish House at the Four Seasons resort and Spa on Oʻahu. This dish is a take on a fish dip served at the restaurant with a local twist implemented by Saui’s wife Maura.

Yield 3 cups

Ingredients

1 lb marlin, cut into large chunks

3 oz. teriyaki sauce

3 Tbsp cream cheese

1/4 cup + 2 Tbsp mayo

1/2 cup Maui onion, small dice

2 tsp furikake

TT Hawaiʻi sea salt and black pepper

Maui Onion Potato Chips or crackers

Instructions

In a ziploc bag combine the marlin and teriyaki sauce and let marinate in the refrigerator 2-3 hours.

Pre-heat oven 375 degrees.

Line a sheet pan with parchment paper and bake the marlin for 12-15 minutes, until cooked through. Let cool completely. (Can be done a day ahead of time.)

In a large bowl, shred the fish and combine with the rest of the ingredients. Serve with chips or crackers.
